Salted Rosemary Simple Syrup

Try using this rosemary simple syrup in place of traditional sweeteners in your next mocktail. The resiny flavour of the rosemary works particularly well with the juniper in gin alternatives.

Ingredients 
250 ml water 
250 g granulated white sugar 
3 sprigs rosemary 
1 teaspoon kosher salt 

Method
Combine sugar, water, rosemary and salt in a saucepan over medium high heat. Bring to a boil, stir, and remove from heat. Cool to room temperature and strain. Will keep up to 2 weeks refrigerated in a sealed container.
