A beautifully sweet and fragrant simple syrup to add a little interest to your mocktail recipes.
250 ml water
250 g granulated white sugar
50 g ginger, skin removed and diced
6 fresh kaffir lime leaves, torn
2 fresh lemongrass stalks, sliced
1 red chilli, diced
zest of 3 large limes
Combine all ingredients in a saucepan over medium high heat. Bring to a boil, stir, and remove from heat. Cool to room temperature and strain. Will keep up to 2 weeks refrigerated in a sealed container.
