Thyme Simple Syrup

A lovely herbal simple syrup with earthy floral notes. 
250 ml water 
250 g granulated white sugar 
3 sprigs thyme

Combine sugar, water, and thyme in a saucepan over medium high heat. Bring to a boil, stir, and remove from heat. Cool to room temperature and strain. Will keep up to 2 weeks refrigerated in a sealed container.
