This simple syrup is easy to prepare and adds a delicate heat and sweetness when used in mocktails. It goes especially well with whiskey and gin alternative spirits.
250 ml water
250 g granulated white sugar
250 g ginger, peeled and sliced
Combine equal parts sugar, water and ginger in a saucepan over medium high heat. Bring to a boil, stir, and remove from heat. Cool to room temperature and strain. Will keep up to 2 weeks refrigerated in a sealed container.
