Non alcoholic sour in a coupe on a wooden table

An all-time favourite at our non-alcoholic bar in Melbourne, this alcohol free sour is balanced and semi-tart. Lots of bright citrus here with some fresh, bittersweet notes thanks to the botanicals in the gin alternative. A knockout.

Ingredients 
60 ml Brunswick Aces Spades Sapiir 
15 ml lemon juice 
30 ml lemon oleo 
½ teaspoon marmalade 
1 egg white (or 30 ml aquafaba) 

Method 
Combine all ingredients in a cocktail shaker with ice and shake hard for 10-12 seconds until cold and foamy. Double strain into a chilled coupe glass and garnish with a dehydrated lime wheel.
