Foregoing more traditional citrus options for yuzu and mandarin elevates this alcohol free cocktail beyond that of a mere sour. The floral notes of the Gnista play with the bitters, and egg white (or aquafaba in the vegan version) adds a beautiful mouthfeel, bringing all the flavours together. A triumph.
Ingredients
70 ml Gnista Floral Wormwood
30 ml yuzu juice
20 ml mandarin cordial
2 dashes Peychaud bitters
egg white or 30 ml aquafaba
splash of soda water
Method
Shake ingredients in a cocktail shaker with ice and strain into a rocks glass. Serve with an ice block and garnish with two drops of Peychaud bitters.
